Bring steak to room temp and pat dry. Season with salt, pepper, and garlic powder.
Heat a cast iron skillet over high heat. Add a small splash of oil.
Sear steak for 1–2 minutes per side. Don’t overcrowd the pan.
Optional: Add butter, garlic, and thyme in the last 30 seconds and baste.
Let rest 5 minutes. Slice thin against the grain and serve hot!
