Start by taking your steak out of the fridge 30 minutes early. Pat it dry and season with salt and pepper.
Heat a cast iron skillet until very hot. Add a bit of oil, then sear the steak 2 minutes per side.
Transfer the skillet to a 400°F oven. For medium-rare, bake 4–5 minutes; for medium, 6–7 minutes.
Let the steak rest 5–10 minutes before slicing to keep it juicy.
