Preheat oven to 400°F (200°C). Season pork tenderloin with olive oil, garlic, rosemary, salt, and pepper.
Peel and cube sweet potatoes. Toss with olive oil, paprika, salt, and a touch of cinnamon.
Place everything on a sheet pan. Roast for 25–30 minutes, flipping sweet potatoes halfway.
Pork is done at 145°F (63°C) internal temp. Let it rest 5–10 minutes.
Slice and serve with the sweet potatoes. So simple, so good!
