Start with a thick-cut steak and let it reach room temperature. Season well with salt and pepper.
For the grill: Sear on high heat 2–3 mins per side, then move to indirect heat to finish.
For the oven: Sear in a pan first, then bake at 200°C/400°F until done to your liking.
Use a meat thermometer—medium rare is around 57°C/135°F.
